Layers Bakery & Deli is an artisanal bakery and café in the De Pijp neighborhood of Amsterdam, founded by French pastry chef Alexandre “Alex” Scour. It is known for its attention to detail and craftsmanship, especially in laminated pastries like croissants, which are made with care to create delicate, multi‑layered textures.
In the mornings, Layers focuses on freshly baked viennoiserie, such as croissants, pistachio buns, and seasonal pastries, all made in an open pastry lab where customers can often see the process. In the afternoons and evenings, the space transitions into a deli, offering sandwiches, salads, and creative savory dishes like lobster rolls and burgers
